Philosophy on Cuisine
Our philosophy is to provide our guests with a healthy gourmet dining
experience of local flavors from Northern New Mexico and other cuisines. We
use the freshest ingredients with the highest integrity, organic, when
possible, and incorporate healthier ingredient alternatives and low fat
cooking techniques.
Guests
are often amazed that our low-fat healthy cuisine is so appetizing and that
they are able to sustain the experience after returning home. Our James
Beard award-winning executive chef, David Farrell, implements his haute
cuisine talents in unison with healthy cooking techniques and ingredients to
create delectable yet healthy food.
John Vollertsen, our instruction chef, teaches guests Southwest specialties
and healthy cooking tips. All of our chefs work in an open kitchen
environment encouraging guests to quiz our experts.
We choose the best and freshest ingredients available, often flying in fish
from the seacoast, meats from specialty ranches, and use our abundance of
wonderful local produce from the Rio Grande valley and our own organic
garden and greenhouse. We like to use alternative healthier ingredients,
succanat, a sugar substitute, spelt flour to replace wheat, and oils that
are beneficial to our vitality.
We pride ourselves in our cooking education program helping our guests to
recreate our healthy gourmet cuisine upon returning home. Simple changes in
ingredients and cooking techniques can transform guests into healthy and
happy cooks. We believe our method of cooking is sustainable because despite
being healthy, the dishes are flavorful, satisfying and simply delicious.
The historic Ranch House Restaurant is a comfortable setting for dining
at Vista Clara Ranch. The open kitchen invites guests to discuss nutrition
and cooking techniques with the chefs.
In the colder months, guests sit by kiva fireplaces and in the warmer
months are seated in the outdoor portal to enjoy the light summer breeze.
The dining experience at Vista Clara Ranch is
four-star: white linen table clothes and napkins;
attentive servers, gourmet Santa Fe spa cuisine.
